Wash the courgettes and cut them lengthways, pre-heat a griddle and grill them. When ready season with salt, dress with EVO oil and a few leaves of mint. Arrange the slices of Turkey Breast on a plate and place the seasoned courgettes on top. Wash the fruit well, cut the strawberries in half, the peaches into thin slices, the watermelon into small pieces. Put the fruit, together with the cherries, into a bowl.
This makes a complete and nutritious lunch.
