Citterio produces its pancetta from the underbelly of Italian pork, in its classic formats: wrapped pancetta, smoked, thin-sliced pancetta, sweet, thin-sliced pancetta and bacon. Its always delicate smell depends on the spices added to the meat, which is seasoned up to three months.
