Cous cous with vegetables and Salame di Milano

  • Salame di Milano (small pieces or strips)
  • 250 g cous cous
  • 2 carrots
  • 2 red onions
  • 1 green pepper and 1 yellow pepper
  • 1 big purple eggplant
  • 2 zucchini
  • 10 small tomatoes
  • 1 spoon of turmeric
  • Salt
  • Olive oil
  • Mint leaves


Put the cous cous in hot water until totally covered. Then, Cook covered for a couple of minutes.
In the meantime, cook the vegetables (cleaned and cut) in a non-stick pan with a little bit of oil: red onions, carrots, peppers, the eggplant, zucchini and tomatoes. 

Flavor the vegetables with salt and add a ladle of water. Let them cook until softened. Then, add ½ spoon of turmeric. When the vegetables are ready, add the cous cous.

Serve together with the salami, by adding some mint leaves.
