Peel the apples, remove the core, cut them horizontally into 1 cm thick slices and put them in a bowl, sprinkling with lemon juice.
Cut the speck into thin strips. Work the robiola cheese with chives cut with scissors and seasoned with salt and pepper. Spread honey on half of the slices and cover with the other half. On the surface of the canapés, put a cheese cream ball, a few pieces of chives and the speck strips.
