Start by making the béchamel: melt the butter in a saucepan, then add the sifted flour and mix with a whisk. Pour in the previously heated milk and cook over low heat, stirring occasionally until it comes to a boil and thickens.
Now make the mixture for the bread gnocchi: remove the crusts from the day-old bread and cut it into cubes. Put them in a bowl and add the flour, salt and pepper, grated cheese, a pinch of nutmeg and finally the salami cut into strips. Mix all the ingredients thoroughly. Now add the egg and milk and mix again. It’s time to start making your gnocchi: make balls of about 6/7 cm and then cook them for a few minutes in the vegetable stock.
Serve the gnocchi topped with the béchamel sauce.
