To make the parmesan baskets, divide the grated parmesan into 4 piles of about 30 grams each on a baking tray lined with baking paper. Flatten them with the back of a spoon and bake them at 200 °C for 5 minutes until melted and golden. Remove the parmesan wafers from the oven and immediately place them on overturned bowls to give them a basket shape.
Now prepare the parmesan cream: bring the milk to the boil and melt the butter in another non-stick pan , where you will then add the sifted flour. Mix with a whisk and then add the hot milk a little at a time, stirring continously to avoid lumps. Let it thicken and finally add the grated Parmesan. Cook until you get a nice thick consistency.
Take the crispy baskets and fill with a little parmesan cream and 2/3 slices of salami,Finally, decorate the baskets with a thyme leaf and a very thin crispy parmesan wafer.
