Remove the outer layer from 6 large red onions. Use a knife to create a series of incisions about 2 cm deep, in the shape of an asterisk on the top of the onion. Arrange them on a baking tray, adding oil, salt and pepper, then bake at 180°C (355°F) for about 20 minutes. As they cook, the onions will open, creating a sort of flower, with its petals defined by the incisions. While the onions are baking, wash and dice the potatoes. Sauté them in a pan with oil and salt. When the onions have opened, i.e. once they're just about cooked, remove them from the oven. Sprinkle them with the diced cooked ham and a rub with a bit of oil, using a silicone brush if you have one. Return to the oven for about 5 minutes, just long enough for the ham to become light golden brown. Serve on a tray with the pan-fried potatoes
