Blench the celeriac cut into cubes in a large quantity of salted and acidified water.
Cut the tomino cheese in cubes of the same size as the celeriac ones and wrap them with speck.
Skewer the celeriac cubes and the wrapped tomino cheese, alternating them. Cook the skewers on a barbecue or on a hot plate.
Season the mix of lettuce and fruits as you prefer.
We chose to mix soft fruits, wood strawberries, pimpernel, dandelion and lettuce hearts.
