Cut the courgettes into thin slices and fry them in a pan with a little oil and the finely chopped onion. Add the smoked pancetta Fiammiferi and brown them. Cook until all the ingredients are well mixed.
Meanwhile, bring the water for the spaghetti to the boil.
Beat the eggs with the Parmesan, add a pinch of salt and pepper and a ladle of the pasta cooking water.
Drain the pasta and pour it into the sauce, add the mixture with the eggs and mix well, adding more Parmesan.
Serve immediately and enjoy.
