Cut the bread into cubes and toast it in the oven until crunchy. Set aside.
Cut the cucumber (peeled), the celery (with the outer strings removed with a vegetable peeler), the red onion and the pepper into small cubes.
Cut the turkey into thin strips then into cubes.
Mix the cut ingredients and the olives then dress with salt, pepper, EVOO and the vinegar. Then add the bread pieces.
Tear a few basil leaves into pieces with your hands.
Purée the strawberries with sugar and pass through a sieve.
Plate by filling a steel ring mould or cookie cutter with the mixture, then remove the form.
Add a few drops of the strawberry coulis and decorate with the basil.
