Preheat the oven at 180°C.
Pour in a large bowl the minced with eggs, grated parmesan cheese, pistachios roughly minced with a knife and chopped parsley. Soak sliced bread (withour crust) with milk, then wring and crumble it in the pour with the other ingredients. Add salt, pepper and stir the mixture until it becomes uniform.
Move the mixture on a piece of baking paper, pressing it. Place frankfurter on the polpettone, helping yourself with the baking paper. Brush it with a little oil and close the baking paper as a candy with kitchen string.
Bring out your polpettone, let it cool down and serve it sliced, accompanied by salad.
