beat 3 whole eggs with the parmesan, half a glass of milk and a pinch of salt. Roll out the puff pastry so that it lines a circular baking dish. Arrange slices of stretched-curd cheese on the pastry. Pour the egg mixture over the top and put the dish into the oven at 180ºC for 5 minutes until the egg is set slightly. Take it out of the oven, cover the set egg with the Prosciutto Cotto. Then, cut a circle from the other roll of pastry, to match the size of the baking dish. Cut pieces out of this circle to make a face. Make it as scary or as funny as you like! Cover the prosciutto with this second disc. Close it well, pinching the edges of the the pastry together so that there are no gaps. Brush it with the remaining egg yolk. Put the dish back in the oven to finish cooking, again at 180ºC for around 15/20 minutes.
