Salad with lentils, cherries, rocket, and diced cooked ham

Ingredients

  • 500g tinned steamed lentils
  • 350g cherries
  • 1 handful rocket
  • 150g diced cooked ham

For the vinaigrette

  • 8 spoonfuls EVO oil)
  • 1 spoonful Traditional Balsamic Vinegar of Modena
  • salt
  • freshly ground black pepper
  • 1 spoon mustard seeds

Preparation

Wash the cherries, cut them in half and remove the stone.

Wash the rocket and dry it delicately. Put the lentils in a bowl. Add the diced cooked ham, rocket, and cherries.

Prepare the vinaigrette by emulsifying the oil with the vinegar, salt, pepper, mustard and then use it to dress the salad. Serve immediately.
