Boil the potatoes in salted water. Once they are cooked, peel and mash them with a fork or with a potato masher. Add as much salt, pepper and cumin as you wish and the ham cubes.
Put a layer of grated parmesan with a pinch of curry in a hot non-stick pan.
Once the cheese has melted, turn the waffle on the other side being careful not to break it and check that it is melted enough so that it remains elastic.
Put the stuffing at the centre of the waffle and, while it is hot, fold and close it in the shape that you prefer: crescent, triangle, cannon, dumpling, etc.
We chose the triangle because it recalls two Indian dishes: samosa and masala dosa. For this reason I added curry and cumin. Sometimes, cooking and sharing something exotic-tasting makes us dream.
