Ingredients

  • 240 g cooked ham
  • 4 slices of flatbread focaccia (particular type of ‘compressed’ focaccia with an oblong shape recalling the form of a tongue)
  • 140 g snow peas and green beans
  • 240 g rocket
  • 1 clove of garlic
  • 40 g pine nuts
  • 40 g extra virgin olive oil
  • 25 g parmesan
  • 15 g pecorino cheese
  • some ice cubes /li>

Preparation

Blanch the green beans and the snow peas in a large quantity of salted and acidified water.
Very quickly blanch the rocket and quickly cool it in water and ice cubes (this operation is necessary to make the pesto more vivid, durable and less bitter).
Squeeze and carefully dry the rocket and blend it in the mixer with the other ingredients and with one ice cube.
Arrange in the serving plate as you prefer.
